Serves 1 hungry person

This is one of my favourite lunch dishes, packed full of nutrientโ€™s and protein, with a side of my favourite naughty halloumi cheese!

 

Ingredients

1-2 slices of healthy bread of your choice, I recommend rye bread

2 eggs

1 full handful of spinach

Coconut oil, I recommend Nutristrength

Chilli flakes

1 avocado

2 slices halloumi cheese

Approx. 100- 150g kale

 

Method

1.   Start by prepping the crispy kale. Preheat a tray with 2 Tbsp coconut oil until melts to liquid form

2.   Rinse and drain kale before placing into the tray and gently shaking until covered in coconut oil (extra virgin olive oil is another option)

3.   Add chilli flakes and rock salt (optional)

4.   Place in the oven to bake for 5 mins only

*be careful this needs close attention, as it can over cook very easily!

5.   Poach eggs in boiling water with 1Tbsp of Nutristrength coconut oil (I use this instead of vinegar and it works perfectly- no more vinegar-y tasting eggs!)

Poach for 2-4 mins depending on how runny you like the yolk

6.   While the egg is poaching, mush up a seasoned avocado using a fork. I recommend 1 tsp extra virgin olive oil, a squeeze of lemon and a pinch of sea salt

7.   Grill halloumi in a griddle pan using 1 tsp coconut oil (you do not need much oil, or you can even grill it without)

8.   Onto toasted bread, load a generous handful of washed spinach on one side and crispy kale on the other

9. Top this with the avocado, before sitting the poached eggs on top

10. Dress the dish with seasoning of your choice. I recommend a little extra virgin olive oil, a squeeze of lemon, finished up with a sprinkling of chilli flakes
